Ingredients for marinade (make this before making salad)
- ¼ cup fresh lemon juice
- ¼ cup extra virgin olive oil
- 1 tbsp Dijon Mustard
- 2 garlic cloves (peeled and minced)
- ½ tsp himalaya or sea salt
- pinch of cayenne
Ingredients for salad
- 4 cups of cauliflower (coarsely chopped - separate from other ingredients)
- ½ cup carrots (shredded)
- 1 small red bell pepper (seeded and minced)
- ¼ cup red sweet onion (diced fine)
- 2 tbsp fresh parsley (minced)
- 1 tsp fresh basil leaves (minced)
Directions
- Whisk together marinade ingredients and set aside.
- Prepare cauliflower and place in a bowl.
- Pour prepared marinade over cauliflower and mix well.
- Cover and refrigerate for 4-6 hours.
- Add remaining ingredients to cauliflower and marinade for final hour.
- Drain and serve.
